Ingredients: (Serves 2)
1 tablespoon olive oil
1 pound ground chicken (you can also used ground turkey or ground beef, instead)
1 cup dry jasmine rice
2 cloves garlic, minced
1 yellow or white onion, diced
1/3 cup hoisin sauce
3 tablespoons soy sauce
2 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon chili oil
1 tablespoon freshly grated ginger
1 (5 ounce) can diced water chestnuts, drained
2 green onions, thinly sliced
Freshly ground black pepper, to taste
Toppings: sesame seeds + more green onions
Recipe:
Begin by cooking your rice.
For jasmine rice on the stove, rinse 1 cup of rice until the water runs clear, then combine it with 2 cups of water in a pot. Add a dash of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until the water is absorbed and the rice is tender. Fluff with a fork before serving.
For coking in a rice maker, add 1 cup of jasmine rice and 2 cups of water, along with a dash of salt, to the rice maker. Press 'white rice' and let cook.
In a small bowl, mix your minced garlic, hoisin sauce, soy sauce, rice vinegar, sesame oil, chili oil, and grated ginger. Mix this well and set aside.
Turn a pan to medium/high heat and add olive oil. Once heated, add in your chopped onion and the WHITE slices of your green onion (from the bottom of the onion). Let simmer for 3 minutes.
Add on your ground turkey and mash with a meat masher. Let cook for about 7-8 minutes, or until the ground turkey reaches 165 degrees F (74 C).
Once cooked, add in your diced water chestnuts and your sauce (that you set aside earlier). Mix together well. Let cook for 2 more minutes. Turn the heat off.
Add your cooked rice to a plate along with the cooked chicken. Top with sesame seeds and green onions.
