Chicken Fettuccine Alfredo

My all time favorite comfort food! The issue with some fettuccine Alfredo at restaurants is it’s flavorless; but NOT this recipe! My recipe is full of flavor. You and your family are sure to love this!


Serving Size: (2-3)

Double recipe for family of 4

Total Cook + Prep Time: 30 minutes


Ingredients:

  • 4 servings fettuccine, uncooked (8 oz)

  • 1 12oz can cream of mushroom

  • 1 cup heavy cream

  • 1 cup grated Parmesan

  • 2 cloves garlic, minced

  • 3 tablespoons butter

  • 1 cup spinach

  • 1 chicken breast

  • Salt and pepper, for taste


Recipe:

  1. Preheat a grill or Ninja indoor grill to 500 degrees F.

  2. While this is preheating, butterfly your chicken breast in half and then use a mallet to thin out the chicken breast evenly. Sprinkle with salt and pepper on both sides.

  3. Once the grill is ready, add your chicken breast onto it. Cook for 8-12 minutes, flipping halfway through. Use a meat thermometer to make sure the chicken is at 165 degrees F before removing.

  4. In a pot, add water and turn to a boil. Salt the water generously.

  5. Once boiling, add in your fettuccine noodles. Let boil for 12-13 minutes and then turn off the heat and strain.

  6. Turn a large pan to medium heat. Add your butter. Once melted, add your garlic and let simmer for 3 minutes. Then add in your cream of mushroom and heavy cream. Add on your spinach and let it wilt. Add in your Parmesan and stir until thickened.

  7. Once fettuccine noodles are strained, add them into your Alfredo sauce.

  8. Season generously with salt and pepper.

  9. Chop your chicken up and then add in on top of your pasta. Sprinkle with Parmesan.

  10. Serve and enjoy!
