Serving Size: 2 People
Ingredients:
4 Chicken Sausage Links (you can use any type of chicken sausage, but I used Costco's Basil Pepper Chicken Sausage)
1 Russett Potato, chopped into small 1" inch cubes
1 lb. Brussel Sprouts, choped into halves
2 tablespoons olive oil
For the glaze: 1 tablespoon maple syrup, 2 cloves garlic (minced), 1 teaspoon red pepper flakes, 1 tablespoon olive oil, 1/4 cup chicken broth, 1/2 lemon (juiced)
Salt and pepper, to taste
Recipe:
Begin by preparing the glaze. Add in 1 tablespoon maple syrup, 2 cloves minced garlic, 1 teaspoon red pepper flakes, 1 tablespoon olive oil, 1/2 lemon juiced, and chicken broth to a bowl. Mix around well and then set aside.
Heat a pan on medium/high heat with 1 tablespoon olive oil. Once hot, add on your chopped potatoes. Let cook for 5 minutes.
Cut your chicken sausages into wheels. Chop your brussel sprouts into halves. Add them both onto the pan. Add 2 more tablespoons of olive oil on top. Stir and let cook for 5 more minutes.
Add in your maple garlic glaze. Let simmer and then cook for 10 more minutes all together.
Once fully cooked, remove from the pan and serve. Enjoy!
