Serving Size: 2 People
Total Cooking Time: 15 minutes
Ingredients:
4 servings of your favorite pasta shape (I used Trader Joe's Fusilli Corti Bucati Pasta, but other suggestions are: bowtie pasta, penne, or spaghetti)
1/2 shallot, minced
1 clove garlic, minced
2 tablespoons butter
Drizzle of extra virgin olive oil
Juice and zest of 1 lemon
1/4 cup heavy whipping cream
1/4 cup white wine
1/4 cup pasta water
1/3 cup grated parmesan cheese
Salt and pepper, to taste
Optional: chopped parsley and additional parmesan, for topping
Recipe:
Heat a pot of boiling water on the stove. Salt the water and add in your pasta once it's boiling. Cook for the time that it says on the box.
In a large pan, add in your drizzle of olive oil. Let it heat up and then add in your chopped shallots and garlic. Let cook for 2 minutes.
Add on your white wine and butter and let the wine burn off for 3 minutes.
Add in your lemon juice, lemon zest, pasta water, a drizzle of extra virgin olive oil, salt and pepper. Turn off the heat to your sauce pan.
Once your pasta is done cooking, strain it and add it onto the sauce pan. Add in your heavy cream and parmesan (making sure the heat is turned off, you don't want the cream to curdle!). Mix around. Serve and top with (optional) chopped parsley and extra parmesan. Enjoy!
