Creamy Lemon Pasta

Ingredients: (Serves 3-4)

0.5 lb pasta (you can use fettuccini noodles or any type of pasta noodle you’d like!)

3 tbsp salted butter

2 tbsp olive oil

2 minced garlic cloves

1/4 cup white wine (should be a dry wine like chardonnay or Sauvignon blanc, not a sweet wine)

1 cup heavy cream

1/4 cup pasta water

Juice trom 1 large lemon

Dash of lemon zest

1/4 tsp of garlic powder, 1/2 tsp red pepper flakes, salt & pepper (as needed)

Toppings: Parmesan and parsley


Recipe:

  1. Salt your water heavily (so that you don’t have to salt your pasta sauce as much). Once water is boiling, cook your pasta according to the package instructions.

  2. While the pasta is cooking, add your butter to a pan on low-medium heat. <<Make sure to keep the pan not too hot or else the heavy cream will curdle once you end up adding it.>>

  3. Once the butter is melted, add in olive oil. Add your garlic and let simmer for 2-3 mins.

  4. Add in red pepper flakes and garlic powder. Then, add in your wine, and let cook for ~5 more minutes. Reduce the heat down to very low.

  5. Add in the heavy cream, lemon zest, and lemon juice. If it doesn’t thicken, add in some extra Parmesan to thicken.

  6. Once pasta is done, add 1/4 cup of pasta water. This helps the sauce bind together well.

  7. Add the pasta noodles to the sauce and mix.

  8. Serve and top with Parmesan and parsley. Enjoy!
