Creamy Tuscan Gnocchi with Italian Sausage

Ingredients: (2 Servings)

  • 10 ounces Italian sausages crumbled

  • 4 cloves garlic, minced

  • 1/2 shallot, finely chopped

  • 1/2 cup chicken broth

  • 1 cup heavy/whipping cream

  • 1/2 lemon, juiced

  • 1/4 cup sun-dried tomatoes

  • 1 pound potato gnocchi

  • 1.5 cups (packed) fresh baby spinach

  • 1/2 cup freshly grated parmesan cheese

  • Toppings: fresh chopped basil and more grated parmesan

  • Salt + pepper, to taste


Recipe:

  1. Heat a large pan on medium heat. On the pan, add 2 tablespoons of olive oil. Add in your uncooked gnocchi and pan-fry. Stir these gnocchi until they become lightly golden (about 15 minutes).

  2. On another pan, add 1 teaspoon of olive oil (Just a very small amount). Add in your sausage and crumble it with a meat masher to break it up. Cook for about 7 minutes, or until browned.

  3. Stir in the garlic and shallots and cook for about 30 seconds.

  4. Add the chicken broth, heavy cream, lemon juice, sun-dried tomatoes, and cooked pan-fried gnocchi to the pan. Stir around. Cover the pan. Cook for 2 minutes.

  5. Remove the lid and add in the spinach, parmesan, salt and pepper. Cover the pan again for 1-2 minutes until the spinach has wilted.

  6. Ensure the sauce is thickened to your liking (cook for another minute or two if necessary). Serve immediately and top with basil and more grated parmesan. Enjoy!
