Ingredients:
6 corn tortillas
1/2 lb. lean ground beef
1/2 packet of taco seasoning
1/2 yellow onion, chopped
2 garlic cloves, minced
1/2 cup shredded cheddar cheese
For coating the tortillas corn: 2 tablespoons extra virgin olive oil, 1/2 tablespoon nutritional yeast, 1/2 teaspoon salt, 1/2 teaspoon paprika
Optional toppings: green onions, cilantro, guacamole, pico de gallo, lime, cilantro lime sauce, or extra shredded cheese
Recipe:
Preheat your oven to 425°F.
In a small bowl, add 2 tablespoons extra virgin olive oil, 1/2 tablespoon nutritional yeast, 1/2 teaspoon salt and 1/2 teaspoon paprika. Mix around and set aside.
Heat a pan or skillet on medium/high heat. Once hot, add 1/2 lb. of lean ground beef, minced garlic, and 1/2 yellow onion, diced. Break up the meat with a meat masher until it is in small crumbles. Once browned, add in your 1/2 packet of taco seasoning and mix around.
Heat 6 corn tortillas in the microwave for 30 seconds - 1 minute. This is so that the tortillas will be pliable and able to move around.
On a large baking sheet, spray with olive oil spray. Add your 6 warmed tortillas. Once your meat is done cooking, add a small amount of beef to each tortilla. Add a bit of shredded cheese to each tortilla. Close the tortillas and press down with a spatula. Coat the top of the tortillas with the mixture you created earlier. This will give the tortillas a great flavor.
Put the tacos in the oven for 8-10 minutes.
Remove from the oven and serve with the optional toppings. Enjoy!
