This is a fan favorite! It’s so healthy, filling, and delicious. I make it about 3-4 times per week for lunch. Has so many veggies and healthy fats!
Ingredients: (Serves 1)
For the rice:
1/2 cup jasmine rice (dry), 1 cup water
2 tbsp chopped cilantro
1/2 tsp salt
1 lime, juiced
For the toppings:
1/4 cups diced cucumber
1/4 cup feta cheese
1/4 cup diced tomatoes
1/8 cup chopped red onion
1/4 cup roasted, salted pistachios
1/2 sliced avocado
1 tbsp hummus
Salt, pepper, olive oil (as the dressing)
Recipe:
Cook your rice. I usually do mine in a rice maker because it’s easiest, but you can cook on the stove. Add in 1/2 cup of dry jasmine rice, 1 cup of water, and salt. Cook until done. Mix in cilantro and lime
Chop up all of your toppings. Add all of them on top
Add salt and pepper to the avocado
Drizzle bowl with olive oil
