I get a lot of comments on my page that I make the juiciest, most flavorful chicken and I want to show you all how I achieve this. I used to be awful at making chicken back in the day. I'd just bake it with salt and pepper and eat it like that... It was very boring. So I took it upon myself to learn how to cook the best chicken ever, because chicken doesn't have to be boring (as long as you cook it right)!

Ingredients: (Serves 2)
1/2 lb fingerling potatoes
2 chicken breasts
16 oz broccolini
3 tbsp olive oil
Seasonings: salt + pepper, garlic powder, dried thyme, dried basil, blackened seasoning
Recipe:
Preheat your oven to 400 degrees F. While this is preheating, slice your potatoes in half, longways. Throw them in a bowl and season with 1 tbsp olive oil, and all the seasonings above. Toss around to coat them. Add them into the oven for 25 minutes. Broil the potatoes for 5 extra minutes at 500 degrees F at the end to make them nice and crispy!
While this is cooking, pat your chicken dry and add wax paper on top of them. Pound with a mallet to thin them) This is important for it to cook evenly and not burn! Put a little bit of olive oil on each chicken breast. Season with all the above seasonings on both sides. Put onto the grill at 500 degrees for about 15 minutes, or until the chicken reaches 165 degrees F internally. Make sure to set the chicken out afterwards and don't cut into it for 2 minutes. Cut the chicken into strips.
While the chicken and potatoes are cooking, heat a pan on the stove with 1 tbsp of olive oil. Add on your broccolini, season with salt + pepper and cook for 4 minutes.
Add your chicken, potatoes, and broccolini to a plate. Serve and enjoy!
