This dish is really high protein and filled with fiber from the beans. This dish packs a lot of taste and is super easy to make!

Ingredients:
1 lb ground beef
1 cup shredded cheddar cheese
1 cup fritos, or enough to cover the top layer
1/2 yellow onion chopped
3 cloves garlic, chopped
1 15 oz can kidney beans (or sub for black beans)
1/3 cup diced can tomatoes
1 packet taco seasoning
1/2 teaspoon paprika
1/4 teaspoon chili powder
Salt and pepper, for taste
For topping, optional: chopped green onions, sour cream, chopped romaine lettuce, guacamole
Recipe:
Preheat your oven to 420°F.
On a pan, add your ground beef and crumble it with a meat masher. Once the meat is slightly browned, add in your chopped onion and minced garlic.
Strain and rinse your beans well under water in a strainer. Once the meat is browned, add in your beans and diced tomatoes.
Add in your taco seaoning packet, paprika, chili powder, salt and pepper. Mix around well.
Spray a baking dish. Add in your cooked meat mixture. Spread around to flatten and make even.
Sprinkle with cheese all over. Add the fritos on top evenly.
Bake in the oven for 10 minutes, or until the cheese is melted.
Remove from the oven. Serve on a plate and top with optional toppings. Enjoy!
