Ingredients: (Serves 2)
For the steaks:
2 sirloin steaks
1 tbsp canola oil (do not use olive oil for the steaks because the burning point of olive oil is much lower, which will cause it to smoke up prematurely -- canola oil will do the job much better!)
3 tbsp unsalted butter
4 cloves garlic, peeled and smashed
2 sprigs fresh rosemary
1 sprig thyme
For the asparagus:
8 oz asparagus (1 bundle from the store)
1 tbsp olive oil
Kosher salt, to taste
Freshly ground black pepper, to taste
For the mini potatoes:
1/2 lb of potatoes
1 tbsp olive oil
Kosher salt, to taste
Freshly ground black pepper, to taste
Recipe:
Pre-heat the oven to 400 degrees F. Cut your potatoes in half, lengthwise, and then put them into a bowl.
Toss them with 1 tbsp olive oil, salt, and pepper. Mix around until the potatoes are fully coated in oil and seasonings.
Once the oven reaches 400 degrees F, pop the potatoes into the oven for 25-30 minutes.
Wait 15 minutes to start cooking the steak and asparagus.
After 15 minutes of the potatoes are cooking, add 1 tbsp of canola oil to a pan on medium/high heat.
Pat the steaks dry and then season on both sides with salt and pepper. Once these are seasoned, add them onto the HOT skillet (make sure it's heated up a bit). Sear the steak for 2-3 minutes on the first side. Flip the steaks and add the butter, garlic, thyme and rosemary sprigs to the pan. Baste the steak in melted butter by spooning the butter onto the steak for about 1 minute. Allow to cook for 2 more minutes on this side, then cut the heat on the stove.
Remove the potatoes once done cooking and turn the oven to a broil (500 degrees F). Once their oven reaches 500 degrees F, pop the steak in for 1 minute. This will cause the steak to have that crispy texture on the outside, like they do a the fancy steakhouses. (The steaks will cook medium rare with these cooking instructions).
Add your asparagus onto a medium heat pan with olive oil for 7 minutes. Season with salt and pepper.
Once the steak is cooked, remove it from the oven and set it on a cutting board or, even better, a drying rack. Allow to set for 10 minutes WITHOUT cutting into it at all.
Remove the asparagus once cooked and serve the potatoes, asparagus, and steak on a plate. Top with some garlic butter from the pan that you cooked the steak on. Enjoy!
