Garlic Scallion Noodles

These garlic scallion noodles are so full of flavor! They're super easy to whip up and packed with that irresistible combo of garlicky goodness and the fresh kick of scallions. tossed in this awesome sauce made of minced garlic, chopped scallions, soy sauce, sesame oil, and maybe a hint of vinegar or chili oil if you're feeling adventurous. Seriously, these noodles are perfect for a quick dinner fix or to jazz up any meal with their tasty simplicity. Trust me, once you try them, you'll be hooked!




Ingredients: (Serves 2)

  • 2 packets of noodles (I used the Momofuku brand - I bought the garlic scallion noodles, but DIDN'T use the little flavor or seasoning packs that come in it)

  • 3 tbsp sesame oil

  • 3 green onion (scallion) stalks, chopped - keep the white and green parts separated after chopping

  • 2 cloves garlic, minced

  • 1/2 tsp rice vinegar

  • 1/2 tsp red pepper flakes

  • 2 tbsp white sesame seeds

For the sauce:

  • 3 tbsp soy sauce

  • 1 tsp cornstarch

  • 1/4 cup water


Recipe:

  1. Cook your noodles in a boiling pot; My Momofuku noodles cooked for 3 1/2 minutes.

  2. Remove from heat and strain once done cooking.

  3. Prep your sauce. Add in your soy sauce, cornstarch, and water. Mix and set aside.

  4. Heat a pan on the stove on medium heat. Add in your sesame seeds and cook until they're slightly browned. Be careful, though, these seeds burn very quickly! Mix the seeds around the avoid burning. Once slightly browned, remove from the pan onto a separate plate and set aside.

  5. Add in your sesame oil to the pan on medium heat. Once the oil is hot (which should be quickly because the pan is already hot from toasting the sesame seeds), add in your WHITE green onions and minced garlic. Let simmer for 1 minute.

  6. Add in the red pepper flakes and the sauce that you made earlier. Stir until the sauce thickens.

  7. Once thickened, add in your cooked noodles and coat in the sauce fully. Add in your GREEN scallions and toasted sesame seeds. Serve and enjoy!
