Growing up, my little sister would ALWAYS make chicken piccata for us. It was always so delicious and I wanted to perfect my chicken piccata recipe to be as good as hers! 😂
Ingredients:
Chicken:
• 2 large chicken breast, cut in half to make thinner pieces
• 1 tsp salt
• 1/2 tsp pepper
• 1/2 cup flour
• 1/4 cup grated parmesan
• 1 tsp garlic powder
• 3 tbsp olive oil
• 1 tbsp salted butter
Sauce:
• 1/2 cup dry white wine
• 4 cloves garlic minced
• 2 tbsp capers, dried
• 1 cup chicken broth
• 2 tbsp lemon juice
• 1/8 cup parsley
Recipe:
Cut the chicken breasts in half to create thinner slices. Put wax paper or ceramic paper over the chicken and pound it with a mallet to make it thinner.
Mix the flour, parmesan, salt pepper, garlic powder onto a plate. Coat the chicken in this mixture.
Heat up olive oil and butter on the pan on medium heat. Once hot, add the chicken on. Cook for about 8-10 minutes (or until the chicken reaches 165 degrees internally).
Remove the chicken from the pan and then drain the extra oil. Turn off the heat and let the pan set for 5 minutes. Add in white wine and garlic. Mix around for about 5 minutes, or until the wine is almost gone.
Add in the capers, chicken broth, and lemon juice. Once heated for a few minutes, add in the chicken from the plate.
Use a spoon to scoop up the oil mixture in the pan on top of the chicken. Make sure the capers, garlic, etc get on top of the chicken. Let simmer for a few minutes. Remove from the pan and serve!
