Ingredients: (Serves 2)
1 cup dry orzo
2 tbsp olive oil
2 cups chicken broth
2 Italian chicken sausage links (Aidells brand)
1/4 white onion, chopped
3 cloves garlic, minced
4 green onions, chopped
1/4 cup Parmesan, for topping
Recipe:
Heat a pot/dutch oven on medium heat with olive oil
Once heated, add on your chopped onion and garlic. Let simmer for ~3 minutes
Add in your chopped chicken sausage links. Let cook for ~5 mins (or until they’re browned)
Add in your orzo and let pan fry for about 2 minutes
Add in your chicken broth and stir. Make sure to stir every minute or so, so it doesn’t stick to the pan
Let cook for ~10 minutes, or until the broth has been fully absorbed by the orzo
Add in your chopped green onions. Stir and then serve
Top with Parmesan. Enjoy!
