Ingredients: (Serves 4-6)
2 tbsp olive oil
1 onion (diced)
3-5 garlic cloves (minced)
1 Ib ground beef (or ground chicken or turkey)
1/2 lb Italian sausage (optional - but tastes great!)
Salt, pepper, oregano, and dried basil
2 tbsp tomato paste
2 cups marinara sauce
4 cups beef broth (or whichever meat you’re deciding to use)
9 oz of lasagna sheets, broken up by hand
1/2 cup grated Parmesan
1 cup shredded mozzarella
Ricotta cheese (for topping, I used lower fat ricotta)
Large handful of spinach
Directions
Heat 2 tbsp olive oil in a pot (I used my Dutch oven)
Add in onion and garlic and sauté until fragrant
Next, add in ground beef and sausage.
Add seasonings and cook until there is no pink left in the beef or sausage.
Add in tomato paste, marinara, and broth.
Stir and bring to a boil.
Once boiling, break apart lasagna sheets and add to the pot. Add in your handful of spinach. Boil for 9 minutes.
Cut the heat off and add mozzarella and Parmesan. Mix well.
Serve and top with ricotta cheese. Enjoy!
