A fan favorite!! This soup always goes viral when I post 🍋 Also, my whole family requests this soup from me when I cook for them.
Ingredients: (Serves 3-4)
2 tbsp olive oil
1 cup dry orzo
6 cups chicken broth
1 shallot, chopped
3 cloves garlic, minced
2 large carrots, chopped
3 stalks celery, chopped
Seasonings: salt, pepper, garlic powder, and dried oregano
1/8 cup fresh cilantro (or parsley)
1 full rotisserie chicken breast, chopped
1/2 tsp lemon zest
2 lemons, juiced
Toppings: fresh chopped dill + lemon slices
Recipe:
Heat a pot on the stove with olive oil (I use a Dutch oven). Once heated, add on your shallots and garlic. Cook for about 3 minutes on the stove.
Add on your carrots and celery and cook for another 5 minutes.
Season with salt, pepper, garlic powder, and dried oregano.
Add in your chicken broth and turn to a boil.
Once boiling, add in your orzo. Cook for ~8 minutes.
Once done cooking the orzo, reduce heat to a very low simmer. Add in your parsley, chicken, lemon zest, and juiced lemons.
Serve and top with dill and lemon slices. Enjoy!
