Lemon Feta Dill Orzo

Ingredients: (Serves 2)

  • 6 oz dry orzo

  • 3 tablespoons olive oil

  • 1/8 cup fresh dill, chopped

  • 1/4 cup feta cheese

  • 1/2 lemon, juiced

  • Seasonings:

    • 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/2 teaspoon dried oregano, 1/2 teaspoon dried basil


Recipe:

  1. Boil a pot of water on the stove. Salt the water. Once boiling, add in your orzo for 8 minutes.

  2. While this is boiling, make your lemony-sauce. In a small bowl, add in your olive oil, fresh dill, lemon juice, and seasonings. Mix around well.

  3. Once the orzo is done boiling, strain it and run it under cold water for ~3 minutes, or until it's fully cooled. This dish tastes better cold!

  4. Put the cooled orzo into a bowl and mix in your lemony-sauce and feta cheese.

  5. Serve and enjoy!
