I was wondering how I could make some of the tastiest low carb recipes I could think of, and this recipe came to me. It's simple, low carb, high protein, and most importantly - tasty!
Serving Size: 4 quesadillas
Total Cook & Prep Time: 15 minutes
Ingredients:
8 carb balance flour tortillas (I use Mission brand)
1/2 lb. lean ground beef
1/4 yellow onion, diced
2 cloves garlic, minced
1 1/3 cups shredded cheddar/mexican trio cheese
1 cup black beans, drained and thoroughly rinsed
1/2 packet taco seasoning
1/4 cup chopped green onions
Dash of salt, for taste
Small drizzle olive oil
Optional for dips/toppings: guacamole, salsa, pico de gallo
Recipe:
Add a small drizzle of olive oil to a pan on medium/high heat. Once hot, add on your onion and garlic. Let cook for 3 minutes.
Add on your ground beef and mash with a meat masher into small crumbles.
Once the beef is browned and cooked through, add on 1/2 packet of taco seasoning and 1 tablespoon water. Mix around. Turn off the heat to the meat.
Heat another pan on the stove on medium heat. Add on 1 tortilla and top with about 1/4 cup of cooked ground beef, 1/3 cup of shredded cheese, 1/4 cup black beans, and green onions. Add another tortilla on top and let cook for about 4-5 minutes, or until the bottom is browned, then flip.
Remove from the pan, cook the other quesadillas and then cut them with a pizza cutter/knife into 4 triangles. Enjoy!
