Ingredients: (Serves 2 Bowls)
1/2 cup dry jasmine rice, 1 cup water << to make it easier for lunchtime, use microwavable pre-cooked rice -- so much faster! >>
2 cups mixed greens
4 chicken tenderloin strips
1 tablespoon olive oil
1/4 cucumber, chopped
1/4 red onion, sliced longways
1/2 cup reduced fat feta cheese
1/2 avocado, sliced
4 tablespoons roasted red pepper hummus OR spicy hummus
2 tablespoons tzatziki
Fresh dill, chopped
Seasonings for chicken:
Salt, pepper, garlic powder, blackened seasoning, paprika, dried oregano, and dried basil
Recipe:
Begin by cooking the jasmine rice if you're making it in a rice maker or on the stove. If you're heating up 90-second microwavable rice, wait until the very end!
Heat your grill up to 500 degrees (or you can cook your chicken in the air frier OR on the stove)
In a bowl, add in your chicken tenderloins, olive oil, and all the chicken seasonings. Mix around thoroughly. Add your chicken to the grill, air frier, or stove. Flip halfway through cooking and make sure chicken is 165 degrees F internally before removing and chopping into smaller pieces.
Chop your cucumber, red onion, and fresh dill.
Add your cooked rice, mixed greens, cooked chicken, cucumber, avocado, red onion, feta cheese, red pepper hummus, tzatziki, and top with fresh dill. Enjoy!
