Mediterranean Couscous Salad

Let's talk about a salad that's like a party on your plate—Mediterranean Couscous Salad. It's packed with yummy pearl couscous, garbanzo beans, and loads of colorful veggies. This salad is all about those fresh Mediterranean flavors that make you feel like you're lounging seaside with every bite.








Ingredients: (Serves 4)

  • 1 cup uncooked couscous (yields 2 cups cooked)

  • 1 15oz can of Garbanzo beans (rinsed)

  • 1/2 red bell pepper, diced

  • 1/4 cucumber, diced

  • 1/4 small red onion, diced

  • 1/4 cup roasted and salted pistachios

  • 1/2 cup reduced fat feta cheese, crumbled

  • 2 tbsp fresh dill, chopped

  • 1/4 cup olive oil, for dressing

  • 1/2 lemon, juiced

  • 1/2 tsp garlic salt

  • 1/2 tsp pepper




Recipe:

1. Boil a pot of water with 1.5 cups of water. Once boiling, add in your couscous, cover the pot, and reduce heat to a simmer. Simmer for 10 minutes. Once done cooking, remove from heat and let cool.

2. Open your can of garbanzo beans and rinse thoroughly in a strainer. The way beans are stored, it’s VERY important to wash these before adding them to our salad.

3. Chop all of your veggies into small pieces.

4. Add your cooked couscous, rinsed garbanzo beans, veggies, pistachios, feta cheese, salt, and pepper. Mix around until it’s evenly mixed.

5. Add your 1/2 juiced lemon on top and olive oil. Mix around again. Top with dill. Serve and enjoy!
