Mediterranean Dense Bean Salad

Whether you're trying to lose weight or just eat healthier, this Mediterranean Dense Bean Salad is incredible for optimal health. I've seen Violet Cooks making dense bean salads and it inspired me! I make a Mediterranean Quinoa Salad often, but I wanted to switch it up and make the focus on beans to emphasize the Mediterranean diet more. This recipe includes the staples of a Mediterranean diet: healthy legumes, healthy fats, vegetables, nuts, and herbs. It is so delicious, I promise you guys are going to love it.


This also stores in the fridge REALLY well - so feel free to pop it into the fridge for meal prepping during the week.

Servings: 3


Ingredients: (Serves 3)

  • 2 cans of garbanzo beans (16 oz cans), rinsed throughly and drained

  • 1/2 cucumber, chopped

  • 1/2 red onion, chopped

  • 1/2 cup reduced fat feta cheese

  • 1/4 cup pistachios (de-shelled)

  • 1/4 cup chopped cilantro

  • 1/4 cup chopped parsley

  • 1/2 lemon, juiced

  • 1/4 cup extra virgin olive oil

  • Seasonings: garlic salt, pepper, paprika


Recipe:

  1. Chop your cucumber, onion, cilantro, and parsley.

  2. Drain your garbanzo beans thoroughly with a strainer. Make sure you rinse them for 1-2 minutes to get all the excess storage juices off of it. Let them dry and make sure they're not wet afterwards.

  3. Add your beans, cucumber, red onion, cilantro, parsley, feta cheese, de-shelled pistachios, juiced lemon, olive oil and seasonings to a large bowl. Mix around thoroughly. Serve with a large spoon or ladle. Enjoy!
