Olive Garden Chicken Gnocchi Soup


One of my most popular recipes, my version of the Olive Garden Chicken Gnocchi Soup 🥣


Servings: 4-6


2 tbsp olive oil

1 rotisserie chicken, just the breast (or just 2 cups of chopped chicken breast)

1 package gnocchi (1.1 lbs / 17.5 oz)

1/2 yellow onion

3 cloves garlic, minced

2 ribs celery, chopped

1 cup carrots, chopped

1/3 cup flour

6 cups chicken broth

2 cups spinach

1 cup heavy cream

Seasonings: 1 tsp salt, 1/2 tsp pepper, 1/2 tsp garlic powder, 1/2 tsp dried oregano

Topping: grated Parmesan cheese


Recipe:

  1. If you’re using your own chicken breast instead of a pre-cooked rotisserie chicken breast, add olive oil to your chicken breast and season with salt and pepper. Then, bake your chicken in the oven at 375 degrees F for 20-30 mins. If you’re using a rotisserie chicken, just chop the chicken breast up into small pieces, making sure to remove any bones.

  2. Heat a Dutch oven or pot on the pan with olive oil on medium/high heat.

  3. Add chopped garlic and onions to the pan, once hot. Let cook for 3 minutes.

  4. Chop the carrots and celery. Add onto the pan and let cook for 5 minutes.

  5. Add your flour in and stir around until it’s evenly dispersed.

  6. Add in chicken broth and bring to a boil.

  7. Add in your seasonings and stir.

  8. Once boiling, add in your spinach and gnocchi. Let boil for 5-7 minutes.

  9. Bring the stovetop down to a simmer and let set for 3-5 minutes, or until it’s stopped boiling. Then, add in the chicken breast and heavy cream. Stir around.

  10. Serve into a bowl and top with grated Parmesan. Enjoy!
