Olive Garden Chicken Gnocchi Soup Copycat

My most viral recipe EVER on the internet thus far has been my remake of Olive Garden's Chicken and Gnocchi Soup. You'll have to try it for yourself to see why it has over 20 MILLION VIEWS on TikTok in total. There's something undeniably comforting about Olive Garden's Chicken and Gnocchi Soup. The creamy base, tender chicken, and pillowy gnocchi create a symphony of flavors that warms you from the inside out. But what if I told you that you could recreate that same cozy feeling right in your own kitchen? After countless experiments and adjustments, I'm thrilled to share my perfected copycat recipe with you. With extra gnocchi and succulent rotisserie chicken breast, this version takes comfort food to a whole new level.



Growing up, I remember going to Olive Garden all the time with my family. Their pasta, soup, and salad are all SO DELICIOUS. So naturally, when I started cooking on my own, recreating that soup became a bit of an obsession. I mean, who wouldn't want a taste of those nostalgic flavors whenever they wanted, right? After some serious kitchen experimenting (and maybe a few mishaps along the way), I finally nailed it. My homemade version has all the goodness of Olive Garden's classic, but with a little extra oomph—think more gnocchi, more chicken, and just all-around more yum.



Now, whenever I whip up a batch of my copycat soup, it's not just about satisfying my cravings; it's about reliving those precious moments and sharing the love and comfort that food brings. It's like a warm hug in a bowl—a reminder of good times and great flavors. And hey, if you're ever craving that Olive Garden magic but want to stay cozy at home, I've got you covered. Ingredients:

  • 1 lb of chicken breast (I use a rotisserie chicken breast - it tastes the best and is the easiest because it's already cooked, but you don't have to!)

  • 2 tbsp olive oil

  • 1 small yellow onion, chopped

  • 1 full celery rib, chopped

  • 1/3 cup shredded carrots

  • 3 garlic cloves, minced

  • 1/3 cup flour

  • 1/3 cup butter, divided

  • 3 1/2 cups chicken broth/stock

  • 1 1/2 cups heavy whipping cream (regular whipping cream works fine, too)

  • 1/2 chicken boullion cube

  • 1/2 tsp freshly ground pepper

  • 1/2 tsp salt

  • 1/4 tsp garlic powder

  • 4 cups potato gnocchi (1 package; 16 oz) - use Cauliflower gnocchi if you're trying to be healthier)

  • 1/2 cup chopped spinach

  • 1/4 cup of grated parmesan, for topping







Recipe:

  1. Chop your cooked chicken breast into very small pieces. Set aside.

  2. Heat a pot or a dutch oven on the stove with olive oil. Once it's heated, add on your onions, garlic, celery, and carrots. Let cook for 4 minutes (or until tender).

  3. Once tender, add on your seasonings (salt, pepper, and garlic powder) then add on your flour. Mix around until it's all coated in flour and seasonings. Then, add on your butter on top.

  4. Add in your chicken broth and bring to a boil. Once boiling, add in your gnocchi and then immediately bring the heat down to a simmer (low heat).

  5. Once the soup is not boiling anymore, add in your spinach, chicken, heavy whipping cream, and chicken bouillon. Cover the pot with a lid and let set for 15 minutes on low heat (do NOT boil - cream does not do well while boiling and it may become grainy if you do so).

  6. Remove from the low heat after 15 minutes and serve in a bowl. Top with freshly grated parmesan or Romano cheese. Enjoy!
