This super easy, filling, and healthy meal will having you wanting to cook this on repeat after you first try! I make this meal all the time for lunches and dinners when I only have 20 minutes to cook. My special sauce on top is what makes the meal all put together. It's seriously the best sauce EVER. It also helps a lot with cleanup because it's ONE PAN. You won't have a million dishes in the sink afterwards - just one! Pan-fried gnocchi is so much better than boiled gnocchi because the outside is browned and crispy - which is more fun to eat and even looks more aesthetically pleasing. Try this, you won't regret it!
Ingredients: (Serves 2 large portions)
For the sauce:
2 tbsp olive oil
1/2 lemon, juiced
1 tbsp honey
2 cloves garlic, minced
1/2 tsp red pepper flakes
Meat, Veggies, and Carbs:
4 chicken sausage links (I buy the fully cooked Aidell's Italian chicken sausage - it never disappoints)
16 oz of gnocchi
16 oz of Brussel sprouts
1/2 red onion, shopped into large squares
Optional: grated/shaved parmesan, for topping
Recipe:
Turn on 2 pans on the stove to medium heat. Make sure one of the pans is large. Add 1 tbsp of olive oil to each pan.
While waiting for this to heat, chop your chicken sausage into round pieces, chop your Brussel sprouts in half, longways (I also chop off the stems of the Brussel sprouts), and chop your red onions.
Once the pans are heated, add on your gnocchi to the smaller pan and allow to pan fry for 15-20 minutes. Mix around every few minutes to get all sides browned.
On the other pan, add your chicken sausage, Brussel sprouts, and red onion. Allow to cook for 18 minutes on the stove while mixing every few minutes to get each side cooked.
While these are cooking, make your sauce. Add in all of your sauce ingredients and then add on top of the chicken sausage, Brussel sprouts, and red onion. Allow this sauce to stay on for ~4 minutes so that the garlic can fully cook through.
Once the cooking is done for both, cut the heat on both of your pans and add the pan-fried gnocchi into the same pan as the chicken sausage, Brussel Sprouts, and red onion. Mix it all together.
Serve on a plate. Optional: top with parmesan. Enjoy!
