One Pan Chicken Sausage and Pan-Fried Gnocchi

Ingredients: (Serves 3)

For the meat, gnocchi + veggies:

  • 1 tbsp olive oil, for the veggies and meat

  • 1 tbsp olive oil, for pan-frying the gnocchi

  • 4 chicken sausage links (I use Aidell's Italian Chicken Sausage - the best!)

  • 1 package (16 oz) of potato gnocchi (cauliflower gnocchi works too)

  • 1 cup broccoli, chopped

  • 1/2 red onion, roughly chopped into large squares

  • 1 red bell pepper, chopped into large squares

  • Seasonings: salt + pepper

  • Optional: grated parmesan for topping

For the sauce:

  • 1 tbsp olive oil

  • 1/2 lemon, juiced

  • 2 tbsp maple syrup

  • 1/2 tsp red pepper flakes

  • 1/2 tsp garlic powder


Recipe:

  1. Heat a pan on medium heat and add 1 tbsp olive oil to the pan. Once hot, add in your gnocchi. Mix around every few minutes for 15 minutes, or until the gnocchi has become golden brown. Once golden, remove from the pan and place onto a plate/bowl. Keep the heat on medium for your pan.

  2. With your pan still on medium, add in 1 tbsp of olive oil. Add in your chopped chicken sausage, red bell pepper, red onion, and broccoli. Stir around for ~10 minutes (stir every few minutes so it gets cooked on all sides and doesn't stick to the pan). Season with salt and pepper.

  3. While this is cooking, make your sauce in a small bowl. In the small bowl, add in olive oil, juiced lemon, maple syrup, red pepper flakes, and garlic powder. Mix around.

  4. After your chicken sausage and veggies have cooked for 10 minutes, add in your cooked gnocchi. Then, add in your sauce. Stir the ingredients around, coating all ingredients in the sauce and let simmer for 2 minutes on medium heat.

  5. Cut the heat after 2 minutes. Serve the meal onto a plate or bowl. Top with parmesan and enjoy!
