One Pan Chicken Sausage, Veggies, and Potatoes

I'm not kidding when I say this is one of the easiest, most nutritious meals I've ever made. All you have to do is chop the chicken sausage, veggies, and potatoes and add them onto a medium-high heat pan with olive oil for 18 minutes. The sauce on top at the end makes it EVEN BETTER. This is super healthy, nutritious and easy!

Prep time: 5 minutes
Total time: 23 minutes

Serving size: 2 people

Ingredients: (Serves 2)

For the meat, veggies, and potatoes:

  • 2 tbsp olive oil

  • 4 chicken sausage links (I use Aidell's Italian Chicken Sausage - the best!)

  • 4 small potatoes or 2 medium sized potatos, chopped into small cubes (about 1/2 inch)

  • 2 cups broccoli, chopped

  • 1/2 red onion, roughly chopped into large squares

  • 1/2 red bell pepper, chopped into large squares

  • 1 tbsp of minced garlic (about 3-4 garlic cloves)

  • Seasonings: salt, pepper, garlic powder

  • Optional: grated parmesan for topping

For the sauce:

  • 2 tbsp olive oil

  • 1/2 lemon, juiced

  • 1 tbsp maple syrup

  • 1/2 tsp red pepper flakes



Recipe:

  1. Heat your olive oil in a pan on medium heat.

  2. Chop all of your veggies, chicken sausage, and potatoes.

  3. Once chopped, add them onto the hot pan. Season with salt, pepper, garlic powder, and garlic. Stir every 2-3 minutes to ensure all the sides of the food are getting cooked. Continue to do this for 18 minutes.

  4. While this is cooking, make your sauce in a small bowl. Add all of your sauce ingredients together.

  5. After 18 minutes of cooking, add on your sauce and stir around. Cut the heat. Serve and top with parmesan (optional). Enjoy!
