One-Pan Honey Sesame Cashew Chicken


One-Pan Honey Ginger Cashew Chicken is a delightful fusion of sweet, savory, and nutty flavors, all cooked together in a single pan for ultimate convenience. Tender chicken is coated in a luscious honey and ginger sauce, which adds a perfect balance of sweetness and spice. Cashews are added for a satisfying crunch, bringing a rich, nutty depth to the dish. The result is a quick and flavorful meal that’s both easy to prepare and full of vibrant, mouthwatering flavors. Ingredients:

2 boneless, skinless chicken breasts

3 bell peppers, chopped (I used red, yellow, and orange)

1 red onion, chopped

1 cup broccoli, chopped

1/3 cup cashews, unsalted

Salt and pepper, for taste

Olive oil, for drizzling

For the sauce: 1/3 cup soy sauce, 1/4 cup hoisin sauce, 1 tablespoon rice vinegar, 1 tablespoon honey, 1 tablespoon minced ginger

For topping at the end: chopped green onions and toasted sesame seeds


Recipe:

  1. Preheat your oven to 420°F.

  2. Spray a sheet pan with spray (I use olive oil spray).

  3. On a cutting board, chop your bell peppers, broccoli and red onion. Add them onto your sheet pan.

  4. On a cutting board, cut your chicken breasts into cubes. Add them to the sprayed sheet pan.

  5. Drizzle your vegetables and chicken with olive oil and sprinkle with salt and pepper.

  6. In a bowl, add your soy sauce, hoisin sauce, rice vinegar, honey and ginger. Mix together. Add half of the sauce on top of the vegetables and then save the other half for the end.

  7. Put your sheet pan into the oven and cook for 20 minutes.

  8. Remove from the oven and top with the rest of the sauce. Garnish with green onions and sesame seeds. Enjoy!
