Ingredients: (Serves 2)
For the meat, veggies, and potatoes:
2 tbsp olive oil
1 lb of ground Italian sausage
4 small potatoes or 2 medium sized potatos, chopped into small cubes (about 1/2 inch)
2 cups Brussel sprouts, chopped in half
1/2 yellow or white onion, roughly chopped into large squares
1/2 orange bell pepper, chopped into large squares
3-4 garlic cloves, minced
Seasonings: salt, pepper, garlic powder
Optional: grated parmesan for topping
For the sauce:
2 tbsp olive oil
1/2 lemon, juiced
1 tbsp maple syrup
1/2 tsp red pepper flakes
Recipe:
Heat a medium sized pan on medium heat.
Add in your sausage and let cook until it's browned fully. Remove it from your pan into a plate that has a paper towel on it. The paper towel will soak up any extra grease.
Add 2 tbsp of olive oil to the medium heat pan and add in your potatoes, Brussel sprouts, onion, bell pepper, and garlic cloves. Season the potatoes and veggies with the seasonings listed above.
Stir every 2-3 minutes to ensure all the sides of the food are getting cooked. Continue to do this for 18 minutes.
While this is cooking, make your sauce in a small bowl. Add all of your sauce ingredients together.
After 18 minutes of cooking, add back in your sausage and then add on your sauce and stir around. Cut the heat. Serve and top with parmesan (optional). Enjoy!
