One-Pan Lemon Basil Orzo & Chicken

Ingredients:

  • 1 cup dry orzo

  • 2 cups chicken broth

  • 2 tablespoons extra virgin olive oil

  • 1/3 cup basil, chopped into long strips

  • 2 chicken breasts, sliced into halves

  • 1 lemon, juiced

  • Salt and pepper, for taste

  • For topping: 1/4 cup grated parmesan


Recipe:

  1. Cut your chicken breasts into halves so that they're thin. Sprinkle with salt and pepper on both sides.

  2. Heat a large pan on medium heat with 1 tablespoon olive oil. Once hot, add on your chicken breasts. Cook for 4-5 minutes on each side. Make sure the outside is golden brown before removing from the pan. Set the chicken aside on a cutting board.

  3. Add 1 tablespoon olive oil. Then, add on your orzo and mix around, getting all the brown bits from the bottom of the pan into the orzo and let pan-fry for 3 minutes.

  4. Add in your chicken broth and stir around. Let simmer for 7-8 minutes until most of the broth is boiled off. Once done, turn off the heat. Add in your lemon juice and chopped basil. Mix around.

  5. Nestle your chicken in and top with a little more basil. Top with parmesan. Enjoy!
