Super Tender Kiwi Marinated Flank Steak

I've been seeing all over TikTok that kiwi helps tenderize meat, so I wanted to give it a try... and it turned out SO good. Kiwi is a suprising item to tenderize with, but the marinade tasted amazing! The marinade was the best part of the whole meal, so make sure to use it while cooking the flank steak.
Difference between flank and skirt steak for grilling: Flank steak has less fat than skirt steak, so I opted for flank steak as I'm trying to eat super healthy right now. Skirt steak has a bit more flavor and fat on it, so you can also opt for using skirt steak!

Prep time: 10 minutes + 4 hours to marinade in the fridge
Cook time: 10 minutes
Ingredients:
1.5 lbs of flank steak OR skirt steak
Salt and pepper for taste
For the steak marinade:
2 kiwis, peeled and diced
1/2 cup red wine vinegar
1/4 cup balsamic vinegar
1/4 cup avocado oil
1/4 cup chopped fresh parsley
1 teaspoon dried italian seasoning
1 teaspoon dried garlic powder
1 teaspoon dried onion flakes
For the Chimichurri:
1/3 cup extra-virgin olive oil
2 tablespoons red wine vinegar
2 minced garlic cloves
1/2 teaspoon sea salt
1/4 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1/4 teaspoon paprika
1/8 cup finely chopped fresh flat-leaf parsley, stems removed
1/8 cup finely chopped cilantro, stems removed
For the corn:
4 ears of corn
2-3 tablespoons of butter, for topping cooked corn
Salt, for taste
Recipe:
Marinade your steak anywhere from 24 hours - 4 hours before your meal. To make the marinade, add all of the above ingredients under 'For the Steak Marinade' into a small bowl.
Add your flank steak into a large plastic bag or a large bowl (covered with tinfoil), and add in your marinade. Do not add in salt + pepper yet, we'll do this right before we cook the meat. Make sure to move the meat around to marinade both sides and put into the fridge. Flip the meat over once or twice while it's in the fridge to help coat both sides evenly.
Make your chimichurri sauce to top the flank steak with later. Add all of your 'For the Chimichurri' ingredients into a small bowl and then set aside.
Once the meat is marinaded, heat a grill to 450 degrees. Cook your flank steak for about 4-5 minutes on each side. If you want your steak cooked medium, you'll want the steak to be 145 degrees F internally, if you want it without pink, cook it to about 155 degrees F internally. Allow the steak to rest for 10 minutes afterwards before cutting into it. Cook your corn on the cob for about 10-12 minuntes, turning every 3 minutes or so.
Once your meat and corn on the cob are done, add them onto a plate. Top your steak with the chimichurri sauce that you set aside. Serve your corn with butter. Enjoy!
