If you’re craving Panda Express, but want to eat healthier - here’s your recipe! This recipe includes flavorful grilled chicken, veggies, and fluffy rice - and it tastes incredible.
Servings: 2 People
Ingredients:
1 large chicken breast
2 tablespoons olive oil
1 tablespoon butter
1/2 cup Panda Express Sweet Chili Sauce
3 bell peppers - (any colors you’d like!)
1/2 yellow onion
1 teaspoon grated ginger
1/2 cup dry jasmine rice, 1 cup water
Seasonings: garlic salt, pepper, sesame seeds
Recipe:
Wash and cook your jasmine rice - either on the stovetop or in a rice maker.
Heat a pan on medium heat. Add olive oil onto it.
Cover your chicken breast with Saran Wrap or wax paper and then smash with a meat masher to make equally thin on all parts. This will help it cook easier. Season chicken with garlic salt and pepper on both sides. Add your chicken onto the hot pan. Cook for ~5-8 minutes on each side. Add butter halfway through cooking and spoon it onto the chicken to baste.
One separate pan, heat to medium heat and add olive oil. Chop bell peppers and onion into large squares. Add them onto the hot pan. Season with garlic salt and pepper. Add in grated ginger. Mix around and cook for ~10 minutes.
Once chicken is fully cooked (to 165 degrees F), remove it from the pan, turn off the heat, and cut the chicken into squares, about 1” wide. Add them onto the pan with bell peppers and onions.
Add on your sweet chili sauce. Top with sesame seeds. Serve and enjoy!
