Teriyaki Mango Chicken and Rice

Teriyaki Mango Chicken always reminds me of Hawaii — my favorite place to go. When I make this recipe, it makes me feel like I’m back there. Full of lots of flavors, this is a dish that will wow everyone!


Ingredients: (Makes 2 servings)

  • 4 Chicken Breasts

  • 1/2 cup Teriyaki Sauce

  • 1/2 cup Mango Salsa (I get mine from Von’s grocery store)

  • 2 cups Rice (I use Trader Joe’s organic microwavable white rice)

  • Asparagus (or any other vegetable you prefer)

  • 2 tsp Salt

  • 2 tsp Pepper

  • Olive Oil


Recipe:

  1. Get the 4 chicken breasts and teriyaki sauce and combine in a bowl. Put ground pepper on top and let marinade in the fridge for 3 hrs (you can do any amount of time from 30 min-6 hrs, but I prefer 3, since it’s in the middle).

  2. Remove chicken once it has been marinated. Preheat oven to 400 degrees.

  3. Put chicken into oven at 400 degrees for 20 minutes. Make sure the internal temp is 165 degrees or above when you remove.

  4. Drizzle olive oil into a pan at medium heat. Add in asparagus. Sprinkle with salt and pepper. Cook for about 10-12 minutes covered.

  5. Put bag of rice into the microwave for 3 mins.

  6. Put chicken, rice, and asparagus onto your plate. Add mango salsa on top of the chicken.

  7. Enjoy!
