If you're looking for high protein, rice, and veggies in one dish that tastes GREAT, here's your recipe! Cooking chicken, white rice, and bland vegetables is boring - cook this instead! It's full of flavor and will give you all the right nutrients. The high protein will keep you full for a long time, too, which is always a bonus.
Ingredients: (Serves 3-4)
1 pound (lb) of lean ground beef (I used 93% lean)
1 tablespoon olive oil
2 bell peppers (I used red and orange, but you can use any colors), chopped into small squares
1 yellow onion, diced
1 cup dry rice, 2 cups water, salt for seasoning rice
Seasonings:
1 teaspoon sea salt
1 teaspoon ground black pepper
1 tablespoon chili powder
1 ½ teaspoons ground cumin
½ teaspoon ground paprika
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon crushed red pepper flakes
¼ teaspoon dried oregano
Toppings: Mexican shredded cheese + chopped cilantro
Recipe:
Begin by cooking your rice.
If you're cooking on the stove: rinse the rice under cold water, then combine with water in a pot using a 1:2 ratio of rice to water, add in salt, bring to a boil, reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed and the rice is tender. Fluff with a fork before serving.
To cook in a rice cooker: rinse your rice and then add in your 1 cup of rice : 2 cups of water, and add salt, then press 'white rice'.
In a small bowl, add together all of your seasonings. Mix and set aside.
Chop your bell peppers into small squares and dice your onion.
Turn a pan/skillet on medium heat. Add olive oil to the pan. Once hot, add in your ground beef and use a meat chopper to make the pieces smaller. Mix around for about 3 minutes until slightly browned. Use a paper towel to absorb some of the fat from the pan. Throw away the paper towel when done.
Add your chopped bell peppers and onion to the pan. Mix around and let cook for ~15 minutes on the stove while mixing around every few minutes.
Once your rice is done, fluff it with a fork. Add 2 cups of cooked rice onto the pan. Mix it around and then add your seasonings on top (in the bowl you set aside earlier). Mix around thoroughly so that all of the ingredients have seasoning on them.
Remove from the heat and add shredded cheese on top. Serve and top with chopped cilantro. Enjoy!
