Vegetarian BBQ Salad

There's nothing better than a BBQ salad when you're trying to make a meal that tastes delicious but has a ton of nutrients. Picture this: crunchy veggies mingling with avocado, cheese, and onions. Toss it all together with dressing, and you've got yourself a party on a plate! Whether you're chilling out for lunch or firing up the grill for a backyard bash, this salad brings the good vibes and the great taste.


Ingredients: (Serves 2)

4 cups of mixed greens (or romaine, arugula, iceberg - whatever you prefer!)

3/4 cup shredded Mexican blend cheddar cheese (or just regular cheddar cheese works, too)

1/2 cup black beans, rinsed and drained

1/4 red onion, sliced

1/4 cup fresh parsley, chopped

1/2 avocado, sliced

2 slices of your favorite bread - chopped into 1" inch pieces and tossed with olive oil + salt

4 tablespoons of California Pizza Kitchen's BBQ Ranch Dressing

Salt + pepper, for topping


Recipe:

  1. Preheat your oven to 300 degrees. Chop your bread into 1" cubes and then toss in a bowl with olive oil and salt. Place onto a sheet pan and bake in the oven for 7-10 minutes, or until croutons are slightly browned.

  2. Chop your red onion, parsley, and avocado. Rinse and drain your black beans.

  3. Add your lettuce, cheese, black beans, red onion, parsley, avocado, croutons, dressing, and salt + pepper to a bowl. Mix around until the salad is evenly dispersed. Serve and enjoy!
